Meatless Thanksgiving Recipes

Thanks to Kathleen and Karl Keene from FM Veg for stopping by to tell us more about their group. The members include vegans, vegetarians and people just looking for information on healthy eating.  The group is about one year old and is hosting a vegetarian potluck this Sunday at St. Stephen’s Episcopal Church in Fargo.     I wanted to make a correction for something I said on the air. What I said was that 100 calories of broccoli has twice the protein of 100 calories of sirloin steak. It actually has 10.65 grams of protein, as opposed to 15 grams per 100 calories of sirloin steak. I got it mixed up with iron content. It has almost twice the iron content, supplying 17% of RDA for iron, as opposed to 9% for sirloin steak for 100 calories. I apologize for getting it mixed up.

    Protein is however, found in most fruits and vegetables in small amounts, and what I really wanted to say is that there is actually too much protein consumed in the typical American diet. Too mush protein leads to an acidic body, and causing the body to try to neutralize that acid, it leeches calcium brom our bones and other tissues, therefore causing osteoporosis and other problems.

    A vegan or vegetarian diet provides more than enough protein to supply the body’s needs.
